Doc Samson has released his Understanding Sonar and Interpreting the Display Part 2 Advanced DVD. This is the 2nd DVD in his instructional series on sonar.

This new DVD is a comprehensive tutorial on what the sonar actually "sees".
Doc has collected a library of Aqua-Vu underwater camera film and sonar recording that have been collected simultaneously. He uses this information to explain what the sonar "sees" with visual confirmation. The DVD covers bottom content, trees, weeds, fish, baitfish, moving fish and some unusual recording he captured while collecting data for this DVD.

Doc also has 2 other DVD's on using Lowrance products that are like having the manual explained interactively.
